The “Canelli” denomination has a lower grape yield than Moscato d'Asti and a more restrictive territorial definition, including only the historic municipalities on whose hills Moscato Bianco has been grown for hundreds of years.
A hot, dry year, with early vegetative growth and harvest a week early. The rain in mid-August was crucial for achieving balanced grape ripeness, with an ideal sugar/acidity ratio and excellent aromatic expression. GRAPE VARIETY: Moscato Bianco
AREA OF ORIGIN: From vineyards in the heart of the area historically best suited to this grape variety. The soil is of marine sedimentary origin, white, sandy soils.
HARVEST: manual harvest
VINIFICATION: Soft pressing of the whole grapes; the must is stored in steel at -2°C, followed by slow fermentation in temperature-controlled autoclaves until it reaches 5% alcohol.
With a golden straw yellow color, the bouquet is floral, with typical Moscato aromas, with notes of peach and apricot. The taste is creamy and fragrant, with a pleasant fine perlage and a distinctive freshness on the finish.
SERVING TEMPERATURE: 6-9°C
PAIRINGS: perfect for any occasion, it pairs well with fruit-based desserts, Solo da Manduca products, fresh fruit, spicy Asian dishes, Gorgonzola, sorbets, and our artisanal desserts.
