The “Canelli” denomination has a lower grape yield than Moscato d'Asti and a more restrictive territorial delimitation, including only the historic municipalities on whose hills Moscato Bianco has been cultivated for hundreds of years.
A hot, dry year, with a vegetative and harvest advance of a week. The rain in mid-August was very important for obtaining a balanced ripening of the grapes with an ideal sugar/acidity ratio and an excellent aromatic expression. GRAPE VARIETY: Moscato Bianco
AREA OF ORIGIN: from vineyards in the heart of the area historically best suited to this vine. Soil of marine sedimentary origin, they are white, sandy lands.
HARVEST: manual harvest
VINIFICATION: soft pressing of the whole grapes; the must is stored in steel at -2°C, then a slow fermentation takes place in autoclaves at controlled temperature until reaching 5 degrees of alcohol.
With a golden straw yellow color, the scent is floral, typical aromas of Moscato, with notes of peach and apricot. With a creamy, fragrant taste, with a pleasant fine bubble and a particular freshness on the finish.
SERVING TEMPERATURE: 6-9°C
PAIRINGS: perfect for any occasion, it accompanies fruit-based desserts, Solo da Manduca products, fresh fruit, spicy Asian dishes, gorgonzola, sorbets, our artisanal desserts.
